A blend of two single-vineyard wines: Main Road and Dignity. The vineyard is the oldest Cabernet Sauvignon vineyard in the Hemel-en-Aarde, planted in 1998 with just 1.5 hectares of vines, now 27 years old. The terroir features granite and clay soils, with 20% Koffieklip, and is situated on the north and west-facing mid-slopes at an elevation of 260m. The vineyard uses clone 163 and is cordon-trained.
The grapes are destemmed, with 50% left as whole berries. Fermentation takes place in open-top fermenters with spontaneous fermentation, utilizing a mix of pump overs and light punch downs. After fermentation, the wine is basket-pressed and aged for 24 months in 225 litre barrels, with 30% new oak. The wine is then transferred to stainless steel for 3 months before bottling, where it rests for an additional 21 months before release.
Expect red and black berries, perfume and herbal notes on the nose. Graphite, slight fynbos and blackcurrant notes. A pure fruit palate with lively acidity and silky tannins with a gently savoury finish.
