The fruit comes from a cool climate vineyard on the Debos farm, at the foothills of the Babylonstoren mountain. In the vineyard a clone selection is made to meticulously craft this wine. The focus is on smaller berries and more compact bunches. While bunches with lignified stems are used for the whole bunch
component.
Fruit is handpicked, hand sorted and destemmed into open top fermenters, together with 40% whole clusters. Aided by gentle pump overs, fermentation is spontaneous and completes within 4 weeks at moderate temperatures. Extended skin maceration favoured the structure of the wine. Barrel maturation lasted 12 months in older French oak barrels.

Natasha Williams is a dynamic young winemaker from the small town of Saron on the Western Cape. From a young age she felt an affinity for science and nature, making winemaking a natural study choice. She graduated from Stellenbosch University with a degree in Oenology and after completing a 6-month internship at Jordan Winery, joined the Bosman Family Vineyards winemaking team in late 2014. After spending time abroad – completing a harvest in California and travelling through France – Natasha was inspired to start her own label: Lelie van Saron. The name is in Afrikaans and makes reference to her hometown. Natasha’s approach to winemaking is simple: make wine with a pure expression of the terroir and grape variety, using natural methods. The result is elegant, honest wines from cool climate sites.
Lelie van Saron translates to “Lily of Saron” which is a well-known Afrikaans phrase that speaks to wine maker Natasha’s hometown. The lily is a universal symbol of purity and humility and this is reflected in her winemaking philosophy.
