Grapes sourced from two sites. One situated in the cool climate region of Elgin, planted in 2006 on well-drained Bokkeveld shale soils. Grapes are subjected to a long, slow ripening period that contributes to the racy acidity and concentration of flavours in this wine. The other site is a younger vineyard, planted in Stellenbosch on decomposed granite soils, adding texture and salinity to the wine.

Stellenbosch grapes were picked by hand in February, while Elgin picked in March. Grapes kept in cold storage overnight and whole bunch pressed. Spontaneous fermentation in neutral oak followed by 7 months maturation on the lees. Lightly filtered prior to bottling.

Welcoming floral and citrus blossom aromas fill the glass. Pear and succulent white peach flavours bring an initial weight to the palette, tapering off into a lingering linearity that finishes with the concentration and restraint that this wine has become known for.
