A big, assured personality in Jean-Pierre Vazart, & one of a handful of producers bottling wines from the Grand Cru of Chouilly. They farm their Chardonnay like Burgundians, working with lower yields of quality fruit, & achieving organic certification in 2017. The real deal among the Grower Champagne category.
Vineyard work, including pruning and trellising, takes place over several months before the grape harvest. Alcoholic fermentation transforms the grape juice into wine by consuming the sugar and producing alcohol. The wine then undergoes clarification. Each plot is vinified separately to highlight their unique expressions.
Tasting and evaluation help determine the characteristics and potential of the wines. Blending is a speciality in Champagne, combining different crus, grape varieties, and years. Disgorging removes sediment and allows for dosage, determining the sweetness level. The wine is corked and sealed to complete the process.
