Consisting of 85% Chenin Blanc and 15% Clairette Blanche. The Chenin Blanc vines boast an impressive age of 51 years, while the Clairette Blanche vines are 43 years old. During fermentation, the Chenin Blanc undergoes whole-bunch press with no additions and the juice is settled overnight. The next day the Chenin Blanc is placed in old 400 litre barrels for spontaneous fermentation while the Clairette Blanche is placed in concrete eggs. The wine matured for 6 months before being blended and the returned to old 300 liltre barrels and matured for a further 4 months.

White and yellow peach, fennel bulb and hints of citrus blossom emanate from the glass. The palate bursts with stone fruit flavours leading to a crisp saline and pithy finish. Pairs perfectly with seafood or any mildly spicy dishes. Ready for drinking 5 to 10 years from vintage.

An authentic expression of old-vine Chenin Blanc from the Paardeberg mountain in the Swartland. A portion of Clairette Blanche from the same area has been blended in to enhance complexity. Both varietals thrive in the region’s decomposed granite soils and this also contributes to the wine’s unique terroir-driven character.
