Named after Vulpes cana or Blanford’s fox. Blanford’s fox is native to the Middle East, including Iran, Israel, Afghanistan, Egypt, and Pakistan.
From Polkadraai Hills, Uitzicht Farm’s 25 year old vines are biodynamically farmed on decomposed granite west facing slopes. 100% destemmed Cabernet Sauvignon, inoculated with a certified organic yeast, receive punch downs once a day and two pump overs during the whole fermentation. Once ferment is completely dry, the wine is drained off and then allowed to settle for two days. It is then racked into two 225 litre 6th fill barrels. Malolactic fermentation is completed naturally and then racked off the lees.
Expect notes of violets, plum, cassis, earth and a slightly wild, hard-to-describe edge. It is intense, firm and comparativley chewy. Medium-bodied, yet intensely flavoured. Plum and cranberry fruit flavours and fresh acidity with a hint of older wood on the palate, before a super-dry finish.

De Vos is a Dutch surname meaning “the fox”, and Vulpes is the genus name for fox. Each wine is named after a different species of fox.
Volumes are minuscule for the 2023 vintage. The two Chenins are very much in the ‘modern classic’ style – think Alheit, David and Nadia, or Mullineux. The Stellenbosch Cabernet is not a traditionally-styled wine (and deliberately bottled in a non-standard claret bottle); it is almost more Cabernet Franc-like in its particular floral and spice character.
